Abstract

A baking-salt not containing free ammonia is produced by mixing kitchen (common) salt with an amount of one or more ammonium compounds not exceeding 10 per cent of the weight of the kitchen salt so that free alkali impurity present in the salt reacts with some or all of the ammonium compound or compounds to produce ammonia and a salt or salt of the alkali metal. The ammonia liberated is bound by a further substance included in the mass, e.g. 0,1-0,5 per cent of an acid reacting substance such as a primary phosphate, an acid pyrophosphate, a persulphate, or tartaric or citric acid, or mixtures of such substances. The acid-reacting substance may be added to the kitchen salt or to the ammonium compound before they are mixed. The ammonia may alternatively be removed by mixing solutions of the salt and the ammonium compound and evaporating to dryness, or by treating the mixture of the dry substances with a current of air. The ammonium compound used may be the chloride or sulphate. Other baking agents, e.g. malt flour, or milk powder, may be added to the mixture. The baking-salt may be used in place of all or part of the salt hitherto added in the production of dough. Specification 423,972 is referred to.
