Abstract

<PICT:0445536/III/1> In maturing brandy or whisky, the spirit is vaporized under pressure in presence of oak, the most volatile vapours are removed and the remainder are rectified and condensed. Spirit is supplied through an inlet 7 to a closed vessel 1, in which oak in the form of shavings or other divided form is supported on a perforated platform 12 heated by a steam coil 4. The outlets are controlled so as to maintain a pressure of 80 to 100 lb. per sq. in., in the vessel 1. Light vapours are allowed to escape through a valve 18 and chamber 19 to a condenser 22. The remaining vapours, which, it is stated divide themselves into layers according to their specific gravities are drawn off through outlet valves 35, 36, 37 to a common collecting pipe 34 and pass to a rectifying column 40 from the upper end of which, the matured spirit vapours pass to a dephlegmator 50 and condenser 52. The action of the rectifying column 40 is controlled by valves 43 in pipes leading from each of the plates.
