Abstract

426,541. Tempering or mixing chocolate. BOGGILD, C. B. K., and JACOBSEN, M., (trading as BOGGILD & JACOBSEN), 2, Kampmannsgade, Copenhagen. Sept. 1, 1934, No. 25236. [Class 86] A machine for tempering chocolate comprises a jacketed tank in which the temperature is controlled by thermostats effecting the operation of a valve in the jacket connections and of a heating unit, the tank being fitted with a central pillar around which stirrers are rotated in planetary fashion by gearing including a chain passing round a fixed sprocket. The stirrers 18, Fig. 1, are mounted on interengaged shafts 17, 14, the latter having a chain wheel 19 round which is a chain passing round a fixed sprocket 20 ; the shaft 14 is also fitted with a gear 11 in mesh with a driving pinion 10. The discharge door 22, Fig. 4 is mounted in the base of the machine with which it forms a continuous surface and slides on rails 27 ; its rear edge is sloped. One of the thermostats, placed in the chocolate mass, controls the admission valve for the cooling water, and, on a certain temperature being reached, renders a second thermostat, placed in the cooling water, operative, the latter thermostat controlling a heating member and the admission valve.
