Abstract

Mixed drinks consisting of fruit juices and carbonated water are obtained by first subjecting a fruit juice or fruit juice mixture to a vacuum at a temperature between about 28 and 35 DEG C., thus removing the volatile odoriferous essential oils, and then adding a flavouring containing no ethereal oil, with or without sugar. The fruit juice or fruit juice mixture may be preliminarily saturated with carbon dioxide, and then mixed with aerated water, or sterilized water may be added to the fruit juice and the mixture carbonated. Suitable non-volatile flavourings are ginger and vermouth. Examples are given, describing the production of carbonated fruit juice beverages from apple, pear, grape, lemon, orange, and pineapple juice flavoured with ginger.
