Abstract

[Class 28 (ii)] In a machine for slicing pieces having a cross-section of greater breadth than thickness, which latter may be variable over the length of the piece, the table or support which normally presents the piece at right angles to the knife, is so arranged that it may hold the piece at a variable inclination to the knife to cut obliquely through the thickness. The oblique cutting produces slices of greater width than would a perpendicular cutting, the wide slices being of greater value. The inclination of the table or support may be varied as the feed progresses, so that by starting the cutting, with a relatively large obliquity, on the thin end of the piece, the support is restored to perpendicularity as the cut approaches the thicker end of the piece. Slices of substantially uniform width may thus be produced. As shown, the disc knife f is journalled in a slide having lugs el which embrace guide rods d. The driving- motor h is carried on the slide and is geared by bevels f<2> to the knife shaft f the lower end of which carries a pinion i meshing with a gear wheel carrying a crank pin j<2>. A connecting rod k is pivotally anchored to the base. The motor thus reciprocates and revolves the knife. Alternatively, the slide may be operated by a hand wheel or lever ; or the knife support may be arranged to oscillate about a fixed pivot. A steel strip m acting as a scraper is raised, to contact momentarily with the bevelled side of the knife, by a cam m<1>. The substance is held by a clamp bar n<2>, slidable on pillars n<1>, against a plate n which is slidable on a backing table or support o, the movement of the plate n being effected by the engagement of a nut n<4>, at the end of a cranked arm n<3>, with the feed screw p. The table o is pivoted at o<1> to a bracket on a head b upstanding from the base a, and may occupy any angular position between the horizontal and vertical. The angular adjustment of the table o may be effected manually or automatically by the feed. A quadrant q on the back of table is engaged by a worm ql on a shaft q<2> at the lower end of which is slidably arranged a clutch comprising a bevel r, a spur wheel r<1> and an intermediate groove r<2> for engagement with a striking fork. The wheel r<1> is in its lowermost position, geared to a wheel s on the shafts', a pawl t on a reciprocating sliding member t<1> engaging with and intermittently rotating the wheel s. The member t<1> is reciprocated by a tappet t<3> thereon, contacting, at each end of the stroke of the knife slide, with a lug el. The shaft s<1> is connected by bevel gears to the feed screw p and is screwed at s<4> to actuate a slice receiver u in step with the feed motion. A releasable half nut u<3> couples the receiver to the screw. The plane of the table o and the axis of the hinge o<1> are both inclined to the direction of reciprocation of the knife, the knife thereby severing the piece at one end before the other. In operation, the clutch r, r<1> is raised by the striking-fork until it meshes with the bevel r<5>. By turning the handle r<6>, the table o is swung to the horizontal position for clamping the meat and then to the desired initial cutting inclination. The whole piece may be sliced at a constant obliquity, or the restoration of the table o to perpendicularity may be effected manually during the slicing or, if the gears r<1>, s are engaged automatically, in step with the feed.
