Abstract

In the pasteurization of milk, cream, or other liquids, gases are removed from the liquid by passing it as a film with a free surface over a series of moderately inclined surfaces 5, 6 in a closed chamber 1, successive surfaces having progressively increasing and decreasing surface areas and being curved transversely to the direction of flow of the liquid, e.g. being formed of hollow cones, successive cones being inverted. The liquid is subjected during flow to a partial vacuum which is insufficient to cause ebullition, and is finally cooled. As shown, the liquid coming from a heat exchanger in which it is partially pasteurized enters chamber 1 through an inlet 2 arranged above a spreader 3 with perforations 4 through which the liquid passes to the uppermost cone 5. The cones may be detachably supported on one another by <PICT:0407743/III/1> marginal webs 17, the lowermost one being supported on lugs 16. Central and peripheral passages 18, 20 allow escape of the gases which pass off through an orifice 11 connected to vacuum. Steam or an inert or neutral gas may be injected into the liquid from a perforated pipe 12. The chamber may have a removable cover 14 with inspection windows 13. The liquid leaves through an outlet 9<a>. The surfaces over which the liquid flows may be matt or roughened, e.g. unpolished or sandblasted aluminium or other metallic surfaces to increase the surface area.
