Abstract

Fruit juices, sweet musts, &c., are purified by attacking the thickening substances present by the action of added enzymes, and submitting the liquid to germ filtration. Aspergillus Oryzae and Aspergillus Wentii or their enzymes, which attack the albumen, cellulose, starch, &c. are especially suitable for the process. A coarse filtration may precede the germ filtration.
