Abstract
In the preparation of foods, e.g. bread, farinaceous pastes, biscuits, &c., to render them suitable for persons suffering from diabetes &c., part or all of the water normally used is replaced by juice extracted from tubers, rhizomes, bulbs, roots, stalks or leaves of plants containing inulin and other valuable substances, e.g. inosite, after digestion thereof under heat. Examples of the plants which may be used are given. The roots &c. of Helyanthus Tuberosus, for example, may be cooked at 100 DEG C. and the juice then extracted by pressure. Besides inulin, inosite, and other alimentary substances, the juice is said to contain the active principles which prevent the formation of starch and its derivatives in the plants, and it may be filtered and preserved by refrigeration or by sterilizing and then keeping in closed receptacles until required for use.
