Abstract
Lees of wine cultures are made in a permanently lasting form by mixing edible mushrooms with fruit juice and gelatine so that the mass is solid at normal temperature but becomes liquid at about 35 DEG C. The mixture of fruit juice and gelatine can be filled into small glass bottles and injected with the cultures at 35 DEG C. The cultures grow rapidly, and after a few hours the bottles are hermetically closed and the whole preparation is solidified by cooling whereby the cultures are brought to a state of rest.
