Emulsions, making.-Apparatus for making emulsions comprises two or more spraying devices at least one of which consists of two or more concentric nozzles. The sprays may be caused to impinge upon one another or upon a common baffle plate or gauze. As shown, the spraying devices D are connected by pipes C, C<1> with vessels A, A<1> having stirring devices B, B<1>, and are furnished with annular nozzles F, F<1> for the introduction of fluid under pressure, preferably a mixture of steam and air. Additional annular nozzles E, E<1> may also be provided for the return of one or more ingredients or of partly formed emulsion to the spraying devices through pipes H, H<1>. The sprays are enclosed in a chamber L and the emulsified ingredients fall into a container K. The parts of the apparatus may be jacketed for heating or cooling, or may be heated internally by steam coils or direct steam. The apparatus may be completely enclosed and placed under increased or reduced pressure. The ingredients may be supplied and the emulsion removed in continuous fashion. An example describes the emulsification of linseed oil and water using casein, and ammonium oleate or ammonia and oleic acid, as dispersion agents. Specification 14840/93 is referred to.
