Abstract

279,217. Bach, R. G. Sept. 13, 1926. Heating and cooking vessels; lids and covers.- Apparatus for shaping or cooking shoulders and fore-ends of bacon, or gammons, after cutting and boning, comprises a container 8 a portion of which is shaped as an open-ended cylinder with a flat bottom part 11, and a truncated cone-like portion 12 joined thereto and having an open end 13 the lower edge of which is substantially at the level of the flat part 11. The hole 13 is disposed at the right or left of the central plane to suit right or left shoulders. To insert the bacon in the container, a grapple, Fig. 5, is inserted in the hole 13 and passed through the container. The hooks 20 are engaged in the bacon and retained by sliding the ring 21, whereupon the grapple is pulled back thereby drawing the bacon into the container. The bacon is guided into the container by a second person, so that the flesh contacts with the flat bottom 11 and the rind with the top. Pressure is applied to the bacon, during cooking, by a plate 17 and a spring 22 interposed between the plate and a flanged cover 14 which is retained in position by hinged slotted lugs which engage turnbuttons. A bar or spider may replace the cover 14.
