Abstract

A beverage, which is palatable and may relieve some symptoms of menopause, is produced by blending okra and oats into soya milk. Peanuts may be added in place of the oats, but preferably both oats and peanuts are used. The oats and peanuts are soaked before adding to a blender with okra and soya milk. The beverage may be flavoured and sweetened by adding condensed milk, vanilla, nutmeg and/or sugar.

Description

BEVERAGE
This invention concerns a recipe for a soya-milk based drink.
Soya milk is known to be rich in phytoestrogens, omega-3 fatty acids, calcium, folic acid and other vitamins and minerals and, as such, has been shown in various studies to reduce many symptoms of menopause, which results from a decline in the levels of the hormone oestrogen in the female body. Thus, symptoms such as hot flushes, night sweats and dryness of skin, hair and nails have been reported to be alleviated.
Oats are another known source of plant oestrogens.
Okra is a vegetable used in certain regional cuisines, including those of the Indian subcontinent and West Indies. It is known to be a good source of fibre, calcium, vitamin B6, folic acid and vitamin C. It also provides mucin which lends a distinctive consistency to dishes which incorporate it. However, it is not a particularly popular vegetable among the general population.
Dried okra powder is known as an ingredient in certain prepared foods.
The present invention proposes a beverage made from soya milk and okra, together with other ingredients which add nutrients and/or flavour so as to result in a palatable combination. This is believed to be the basis for a commercially viable beverage or range of beverages aimed at relieving menopausal symptoms in a natural way.
Thus, the present invention provides a beverage comprising okra and at least one of oats and peanuts blended into soya milk.
Preferably all three ingredients, okra, peanuts oats, are blended into the soya milk.
This is preferably after soaking the oats, and optionally the peanuts, in soya milk, typically overnight, but less may be adequate.
Flavouring, to taste of the consumer, may be by further addition of one or more of sugar, condensed milk, vanilla or nutmeg, or any other suitable, compatible flavouring as used in other milk based beverages.
The peanuts are conveniently whole unsalted nuts.
The oats may be flaked oats, as a readily available culinary ingredient, or any other form of oats, such as rolled oats.
The okra is preferably cooked pods, typically freshly boiled in water. However, dried okra or okra powder could be used.
Blending may be in a liquidiser goblet or any larger scale blending equipment, or by means of a handheld chopping/mixing/blending device, or any other culinary equipment so long as the solid ingredients are comminuted and thoroughly mixed into the liquid soya milk.
A specific practical example of a recipe for a palatable beverage composition in accordance with the present invention is as follows: Weight (grams) % by Weight Oats 47.5 6.3 Peanuts 72.5 9.6 Okra 72.5 9.9 Soya Milk 375 (=375cm3) 49.6 Condensed Milk 98.5 13.0 Brown Sugar 90 11.9 Vanilla 1 teaspoon - Nutmeg 1/2teaspoon -The peanuts, which are unsalted and whole, together with the oats (oat flakes) are soaked overnight in the soya milk. The okra, which is fresh vegetable, is cooked by covering with water and bringing to the boil and simmering until tender with little water remaining. This cooked okra is then added to the soaked oats and peanuts in soya milk mixture, together with the other ingredients and all blended together by means of a handheld blender or in a liqu idiser.
More generally, the above recipe can be scaled up for commercial beverage products, and modified by omission or addition of any of the flavouring/sweetening ingredients -condensed milk, sugar, vanilla, nutmeg. The sugar in particular may be replaced by one or more artificial sweetening substances.
The soya milk is preferably at least 30% by weight of the composition, and may be up to 90% by weight of the composition. Most preferably it is in the range of 40 -60% by weight, eg. about 50%, as in the above example.
The oats, peanuts and okra together preferably make up in the region of 25% by weight of the composition.
The oats are preferably up to 20%, more preferably up to 10% by weight.
The peanuts are preferably up to 30%, more preferably up to 15% by weight.
The okra is preferably up to 30%, more preferably up to 15% by weight, and also preferably at least 3% by weight.
The sweetening components, sugar and/or condensed milk, are preferably no more than 35% by weight of the composition, and more preferably no more than 25% by weight.
The peanut component, typically as whole unsalted nuts, may be replaced by any type of peanut or peanut extract or derivative, or may be omitted altogether. The oats may be flaked or rolled or of any other type or derivative (eg. ground) or may be omitted altogether.

Claims (11)

  1. CLAIMS1. A beverage comprising okra and at least one of oats and peanuts blended into soya milk.
  2. 2. A beverage comprising okra, oats and peanuts blended into soya milk.
  3. 3. A beverage according to claim 1 or claim 2 wherein the okra comprises cooked pods of okra.
  4. 4. A beverage according to any preceding claim further comprising at least one flavouring substances from condensed milk, vanilla, nutmeg and sugar.
  5. 5. A method of production of a beverage comprising soaking oats in soya milk, separately cooking okra in water, and blending the resulting substances together.
  6. 6. A method according to claim 5 further comprising additionally soaking peanuts along with the oats in the soya milk to form a macerated mixture which is then blended with the cooked okra.
  7. 7. A method according to claim 5 or 6 wherein the substances are blended by chopping and beating.
  8. 8. A method according to any of claims 5 to 7 wherein the substances are blended in or by a liquidising device.
  9. 9. A method according to any of claims 5 to 8 further comprising adding at least one flavouring substance from condensed milk, vanilla, nutmeg and sugar prior to, during or subsequent to the blending of the other ingredients.
  10. 10. A nutrient rich beverage substantially as hereinbefore described.Amendments to the claims have been filed as follows: 1. A method of production of a beverage comprising soaking oats in soya milk, IS separately cooking okra in water, and blending the resulting substances together.6. A method according to claim 5 further comprising additionally soaking peanuts along with the oats in the soya milk to form a macerated mixture which is then blended with the cooked okra. * 207.
