244,728. Christensen, N. H. Dec. 18, 1924, [Convention date]. Preserving milk.-Prior to the desiccating operation in the manufacture of dried milk a part of the calcium content of the liquid milk is precipitated by the addition of a soluble oxalate. Thus, the calcium may be precipitated by the addition of sodium oxalate, and after the removal of the precipitate small quantities of sodium citrate and sodium carbonate or an alkali may be added before the milk is desiccated as by passing it in a thin film over a heated roller. The calcium may be removed from a part only of the milk and then this part be added to the bulk of the liquid. The precipitated calcium need not be removed but may be left in the milk which is to be dried.
