Abstract

A method of increasing the solubility of soluble fibre comprises blending an effervescent powder with dry sodium alginate. Also disclosed is a blend of sodium alginate and effervescent powder which can be dissolved in water to produce a drink which supplies up to 3.5g of sodium alginate per 470ml of beverage. The effervescent powder may comprise sodium bicarbonate, vitamin C and citric acid.

A METHOD FOR INCREASING THE IMMEDIATE SOLUBILITY OF SOLUBLE
FIBRE IN WATER BY BLENDING SOLUBLE FIBRE WITH AN EFFERVESCENT
POWDER
Background
Soluble fibre is a requirement for a healthy diet. Soluble fibre plays a role in a healthy digestive track and may treat lBS and reduce the incidence of constipation. Soluble fibre may play a role in the healthy management of blood cholesterol levels. Fibre supplements are believed to help with weight loss and improvement in the digestive function as part of a healthy diet.
Different types of soluble fibres have different levels of solubility. Some soluble fibres that have key health benefits have relatively low immediate solubility. The formulation into a drink requires high temperatures or large volumes of liquid, making the supplement unpalatable and reducing the chances of users consuming the required amount. This particularly applies to sodium alginate rich in polymannuronic acid. A dose of ig to 3.5g has efficacious supplementation effects in powder format but is difficult to dissolve in water.
Statement of Invention
To overcome this, the invention uses a specific ratio of effervescent powder to soluble fibre to increase the immediate solubility of soluble fibre. This allows up to 3.5g of soluble fibre (sodium alginate) to be dissolved rapidly in cold water. The product is in the form of a powder which is dissolved into 470ml of cold water within seconds.
Advantages This process allows much higher levels of soluble fibre to be delivered in a drink format, providing benefits to diet and improved levels of user compliance in taking the supplement regularly. A powder or compressed tablet can be given to a consumer who can then dissolve the product in water to create a drink.
Detailed Description
This application describes a method for allowing the dissolution of high levels of sodium alginate soluble fibre in a drink to be used as a dietary supplement.
Effervescent matenals are used to enhance the solubility of soluble fibre in cold water.
Soluble fibre is known to assist with correct digestive function, ensuring proper bowel movements and reducing the amount of fat and cholesterol absorbed into the body from food. Most people in western countries do not eat enough soluble fibre and this contributes to the current increasing levels of obesity.
In this method, effervescent powder and sucrose are used to enhance the solubility of sodium alginate soluble fibre (derived from brown seaweed). The components of effervescent powder, sucrose and sodium alginate are blended together to provide a fine homogeneous powder. The resulting powder is divided into units (varying from 4g to 7g depending upon the content of sodium alginate) which can be dissolved in 470ml of cold water in under 30 seconds, providing a drink which is palatable and provides a supplement of soluble fibre.
Previous methods not using effervescent powder have only allowed O.5g of soluble fibre to be dissolved in the same quantity of water. Higher levels of soluble fibre can only be currently achieved by heating the water to improve solubility. This method allows up to 3.5g of soluble fibre (sodium algiriate rich in Polymannuronic acid) to be combined into 470m1 of cold water to produce a palatable drink.
The detailed ingredients for the drink powder are: Sodium Alginate (Ig to 3.5g), Sucrose (O.lg to 1.Og), Sodium Bicarbonate (0.3 to 0.8), Vitamin C (L-ascorbic acid) (0.4 to 0.8g), Citric Acid Anhydrous (0.4 to 0.8g), Maltodextrin (less than 0.4g), Colour (Beta Carotene) Flavounngs, Sweeteners (Acesutfame K, Sorbitol, Aspartame)
