Sterilizing liquids.-Milk or other liquids to be sterilized are heated in a heat-interchanger a composed of straight tubes b in a water bath, further heated in a steam-jacketed vessel k and cooled in a heat-interchanger q composed of straight tubes r. Vessels w, w<1>, w<2> for pasteurizing by the holding process may also be provided with cocks whereby they can be filled and emptied in rotation in the ordinary way, and a by-pass cock l<1> by which the milk can be passed direct from the vessel k to the cooler g. The milk entering the vessel k may be sprayed on to the surface of the milk therein or introduced at the bottom of the vessel as desired. A safety-valve opening at a low pressure is provided to allow gases to escape from the vessel k. The tubes of the cooler q can be enclosed in jackets, each containing one or more tubes, through which cooling liquid may flow in counter current to the milk. Special cooling- liquid, such as cooled brine may flow through some of these jackets.
