Abstract

The production of granulate (2) yeast from wet yeast comprises the steps of introducing wet yeast into an extruder, forcing gas e.g. air, into the wet yeast whilst within the extruder, and extruding the wet yeast through an apertured plate in the extruder, the granulate preferably being formed by the yeast breaking up upon issuing from the plate. The granulate (2) has a rougher and larger surface than that (1) produced without the introduction of the gas, and is more readily dried and rehydrated. Emulsifier may also be added to the yeast in the extruder. Extrusion is preferably effected through nozzles of a length to diameter ratio of 1 to 4:1, at an extrusion speed of 0.2 to 5 metres per second. <IMAGE>
