930,000. Active, porous, dry yeast. DISTILLERS CO. Ltd. Jan. 22, 1962 [Jan. 31, 1961], No. 3555/61. Classes 14 (2) and 49. In producing active, porous, dry yeast, which can readily be dispersed in water and is suitable for use in baking, an aqueous suspension of yeast, e.g. cooled to below 10‹ C., is foamed, as by whipping, and then dried at substantially atmospheric pressure, e.g. in a current of air at 25‹ to 50‹ C. The volume of the foam may be twice that of the suspension. The suspension may contain, as a stabilizer, between 0.2 and 2.0% of glyceryl monostearate, computed on the total weight of suspension, starch as a stiffener and sucrose or maltose. The foam may be dried in the form of a layer, 0.1 to 0.3 inch thick, on a moving belt or on a fine gauze tray in a drying cabinet.
