Abstract

A process has been developed for the solvent fractionation of an animal or vegetable fat into distinctive fractions of well defined physical properties. The fat is partitioned into three fractions by only two crystallizations from acetone or other solvents. One is a semi-solid fat fraction resembling cocoa butter in melting properties which melts at about 36 DEG -38 DEG C. Another is a high melting solid fat which melts above 45 DEG C. The third fraction is an oil at room temperature. The invention also relates to the uses of these fractions either by themselves, by combination of the fractions themselves or in combination with other fatty materials such as cocoa butter or various animal or vegetable fatty materials to create fatty products for food or non-food use. The Examples relate to the fractionation of butter fat and palm oil, respectively.
