Abstract

A process for the production of a protein-rich product from a material with a high cellulose content, in which the cellulose- containing material, in finely comminuted form, undergoes hydrolysis, and the hydrolysate obtained subsequently undergoes lactic fermentation. The materials with a high cellulose content are mainly materials of vegetable origin such as wood and wood waste, and cellulose, modified cellulose and paper.
