Abstract

Starch hydrolyzates of low viscosity, low degree of browning, low hydroscopicity and mild sweetness and which tend not to crystallize to any great extent are provided by reacting a liquified starch with a Streptomyces amylase. The hydrolyzates comprise glucose, maltose, maltotriose, maltotetraose, maltopentaose, maltohexaose, maltoheptaose, maltooctaose and a minor amount of dextrin in characteristic weight percentages. They can be reacted with saccharose to provide a sugar syrup.
