Abstract

This starch hydrolyzate contains up to 10% by weight of glucose, at least 72% by weight of maltose and maltotriose taken together, less than 70% by weight of maltose and up to 20% by weight of the whole dextrin and oligosaccharides as high or higher than maltotetraose, these contents being calculated relative to the total weight of the dry matter, the other constituent of the hydrolyzate being water and it has a viscosity at 25 degrees C which can reach 2000 cps when the concentration of dry matter is 75% by weight relative to the total weight. It is prepared by saccharification of a liquefied starch by treating it at a temperature of 60/65 degrees C and at a pH of 5.0-7.0 with a Streptomyces amylase having enzymatic activity and characteristics such that the optimum activity pH is between 4.5 and 5.0 for the starch substrate, regardless of the limit of starch hydrolysis by this enzyme is not more than 75% of theoretical maltose and that the glucose ratio maltose produced from starch by this enzyme is not more than 0.06: 1 by weight, then by concentration of the obtained starch hydrolyzate to a water content of 40 to 5% by weight with respect to to the total weight of the starch hydrolyzate.
