Preserving hams. - Hams are preserved by enclosing them in thin-walled metallic envelopes, such as flat tins, which approximate in shape to the shape of the hams and exceed them in volume by about 10 per cent. When the tins are evacuated, they collapse so as to fit the hams closely, so that during the subsequent cooking the hams can expand without bursting the tins; during the cooling, the envelopes contract with the hams.
