1224. Aumann, A. Jan. 17. Producing circulation in a liquid by gas pressure.-An apparatus for producing continuous circulation of a fermenting or other liquid in a vessel A, comprises a glass cylinder F which is fitted over the bung - hole and is alternately filled with liquid, forced into it by the pressure of gas produced by fermentation or other gas, and discharged into the lower portion of the cask. A pipe C passing loosely through the bung C' dips into the fermenting liquid and communicates at the top with the interior of the cylinder F. The upper end of the cylinder is fitted with a casing x comprising two valves M<1>, M<2> operated by stops q on a shaft p which is rocked by a weighted arm s engaged by projections h, i on a weighted arm k carried by a spindle g which is rocked by movements of a float rod G. The valve M' opens communication through a pipe N and cock D' with the gas space L in the cask, and the valve M<2> with the atmosphere or a gas-collecting apparatus. In operation, the valve M' being closed, the pressure of the gas collecting in the space L forces the fermenting liquid into the cylinder F until the float H strikes a stop d on the float rod G. The rod is raised and rocks the spindles g, p, opening the valve M<1> and closing the valve M<2>. The gas from the cask passes through the pipe N into the cylinder F and forces the liquid through a pipe O and a non-return valve into the bottom of the cask. The float H in its fall contacts with a stop d<1> on the valve-rod, causing the rod G to fall and closing the valve M' and opening the valve M<2>. If desired, air, oxygen, or carbon dioxide under pressure may be passed into the gas space L through a cock attached to the bung C<1>. To prevent solid material in the fermenting liquid from either settling to the bottom or forming a layer on the surface of the liquid, perforated plates are fitted into the fermenting vessel a slight distance above the bottom and also below the level of the liquid. The apparatus may be used for fermenting a mixture of ground fruit, sugar, and water, or a mash containing coarselyground malt and hops, and for ageing and blending wines, spirits, liqueurs, &c.
