Abstract

Butchers' fittings. - A device whereby a butcher may cut up a carcase singlehanded is attached to the usual block a and consists of an arm c carrying a hook b. The arm is slidably mounted in an arm d pivoted at e to a frame f, which is pivoted to a frame h secured to the block. The arm c may be held in its adjusted position by burning the screwed handle n, and the arm d carries a double pawl k which engages the teeth of a double rack m. The front of the frame f is recessed to hold the carcase, which is also held from lateral movement by a pivoted double jaw o. The hook b holds one leg of the carcase which can be held open as it is cut by pulling back the arm c, which is held by the ratchet against the spring j. A hook p pivoted on the jaw o is adapted for use in holding the side of a pair of fore-quarters. The frame f is normally locked by means of a screw bolt, but may be turned back out of the way when necessary.
