Abstract

Preserving cheese &c.-Soft cheese, fermented curds, &c. are stored and preserved by wrapping the cheese &c. in tin foil, and placing it, with or without the addition of a suitable liquid, in leaden or other airtight cases, which are heated and then pierced to allow the gases produced to escape, and are finally soldered up, thus producing a partial vacuum on cooling.
