Abstract
Starch is obtained from wheat flour by the action of a single proteolytic enzyme such as pepsin or trypsin which is without action on starch or its cellulose envelope but which converts the insoluble nitrogenous constituents of the flour into soluble substances which can be removed by water. In an example a mixture of pepsin, water, and hydrochloric acid is heated to 40 DEG -50 DEG C., the flour being then added and the heating continued till the density of the liquor remains constant. The amount of pepsis employed is 0.04 per cent of the weight of flour. When the reaction is complete the liquor is separated from the starch in a centrifuge, the starch being intermittently washed with water till free from acid. If trypsin is employed it is dissolved in a solution of sodium carbonate or bicarbonate. The starch is removed from the centrifuge and dried. Any gluten remaining in the starch may be removed by a solution of sodium hydroxide. The nitrogenous liquor obtained as a by-product can be used as a fertilizer or as a base for food-stuffs.
