1521884 Chocolate composition UNILEVER Ltd 23 July 1975 [26 July 1974 (2)] 33175/74 and 33176/74 Heading C5C Chocolate contains a confectionery fat having a slip melting point of 30‹ C. to 45‹ C., a dilatation at 20‹ C. of 1000 to 1800, an iodine value of at least 40, a trans index (defined) in excess of 25% and comprising a blend of palmitic and non-palmitic fats (defined) both of which have been selectively hydrogenated under trans-promoting conditions. A confectionery fat per se having the above properties is produced by separately hydrogenating the palmitic and non-palmitic components of the blend.
