Procedure for the preparation of a food oil, which remains limpid and stable for at least 72 hours for any temperature higher than or equal to temperature t0, said oil being prepared from a crude palm oil, characterized in that, in a first stage, the crude palm oil is subjected to at least one fractionation by crystallization, in order to separate a fluid fraction and a specific fraction, said fluid fraction remaining limpid and stable for at least 72 hours for any temperature greater than or equal to a temperature t1, the temperature difference (t1-t0) being approximately 2 to 3ºC; and, in a second stage, 100 parts by weight of the precipitated fluid fraction with 3 to 55 parts by weight of a lauric fat of which more than 40% of the chains are mixed at a temperature comprised between approximately 60ºC and approximately 70ºC in C12, said fat having an iodine number of between 5 and 30 and a saponification number of between 235 and 270.
