Abstract

1518261 Dispersing gases in liquids BREWING PATENTS Ltd 23 June 1975 [22 March 1974] 12923/74 Heading B1C A method of introducing a relatively insoluble gas into a liquid (e.g. a fermentated liquid) comprises dissolving the gas under superatmospheric pressure, in a carrier liquid mixable with the said liquid, and introducing- the solution into the said liquid in such a way that the formation of gas bubbles is restricted or avoided. A relatively insoluble gas is defined in such a way as to include oxygen and nitrogen but. exclude carbon dioxide. The formation of bubbles may be avoided by injecting the gas/liquid solution vigorously through a short tubular nozzle, it being stated that the fall in pressure is thus so rapid that bubbles have no time to form; injecting it at low velocity through a nozzle such as one in which the pressure drops gradually in the length of the nozzle, such as a coil of stainless steel tube which may be rolled : to the section shown in Fig. 1; or a nozzle as shown in Fig. 2 which ejects the liquid as a sheet. Examples relate- -to the introduction of oxygen into brewing wort of high specific gravity with avoidance of foam production and of release of dissolved carbon dioxide. The carrier liquid may be water or brewing liquor and may be mixed with part of the brewing wort at high pressure and the pressure than reduced; it may be cooled to 2‹C to enable the gas content to be increased repeated slow injections of carrier liquid may be made at intervals into the brewing liquor to reduce the ester level. Water saturated with oxygen at a partial pressure of 5 atmospheres absolute can be introduced into fermentation liquid at atmospheric pressure at a dilution rate of 2% giving an oxygen content of 6p.p.m., or at 10 atmospheres at a dilution rate of 1:9 into a circulation line of brewing liquor, or into an oxygen-free wort on its way to the fermentation vessel.
