Abstract

1512897 Coffee whitener RALTSON PURINA CO 4 June 1976 [6 June 1975] 23141/76 Heading A2B A coffee whitener includes 2-10% by wt. of a proteinaceous composition comprising a soy protein isolate or a modified soy protein isolate and casein and/or a caseinate in a wt. ratio of isolate to casein of from 10:90 to 80:20, provided that the caseinate makes up at least 0.9% of the coffee whitener. The whitener may be prepared by forming an aqueous slurry of the ingredients and spray drying. Conventional ingredients may be present, e.g. water soluble sugars, edible fats, stabilising salts and emulisfier.
