Abstract
1468515 Reconstituting yeast DISTILLERS CO (YEAST) Ltd 16 July 1974 [23 July 1973] 34948/73 Heading A2B Active dried yeast is reconstituted prior to the addition of flour to form dough, by mixing the yeast with water containing an additive which is an aliphatic polyol or sugar not metabolised by bakers yeast. The additive may be glycerol, sorbitol, inositol, isosorbide, pentaerythritol, rhamnose. sorbose, or lactose. Preferably 10-30 parts of dry yeast is added to 100 parts of water containing 0.5 to 2% of the additive, the reconstitution being carried out at 30-45‹C for up to 30 mins.
