Abstract

1429767 Sterilization NESTLE SA 7 May 1973 [9 June 1972] 27134/72 Heading A2D [Also in Division F4] A method of cooling sterilized particulate solid materials in continuous or semi-continuous flow, comprises contacting the materials with a sterile cooling fluid wherein this fluid flows in a sterile closed circuit including means for separating the cooled solid materials from the fluid and a cooling device for recooling the cooling fluid under sterile conditions. The circulating fluid may be sterilized in the closed circuit upstream of the cooling device. The particulate solid material may be meat and the cooling fluid water. The method may be carried out in the apparatus shown in Fig. 1, wherein a cooling barrel 1 is fed with hot sterilized particulate material via rotary valve 1b. Cooling fluid is pumped into the barrel via pipe 2 and the cooled solids are subsequently separated from the cooling fluid at inclined separating screen 3a. Separated cooling fluid flows into vessel 5 and ultimately via cooler 8 back into the main process stream through pipe 2. The closed circuit may be provided with a sterilizing heat exchanger 24, this exchanger and cooler 8 preferably being plate heat exchangers. There may also be provided means for drawing off fluid from the circuit and means for adding makeup fluid to the circuit.
