Abstract

1411838 Frozen french fried potatoes McCAIN FOODS Ltd 22 Nov 1973 [29 Aug 1973] 54147/73 Heading A2E Frozen french fried potatoes are prepared by blanching raw potato segments in hot water in two-stages, firstly at 150-160‹F for 12-25 min and secondly at 175-195‹F for 2-6 min, the segments being cooled between stages, the blanched segments then being dried in heated air to reduce the wt by 12-18%, fried and frozen. The raw segments are preferably prepared by peeling, trimming, cutting and washing raw potatoes. The segments are preferably cooled to 100‹F and kept at this temp. for 10-20 mins between blanching stages. The dried segments are preferably equilibrated at room temp. for 3-10 mins and then fried by immersion in deep fat at a temp. of 325-375‹F for 35-65 secs, thereby further reducing the wt of the segments by 20-25%.
