Abstract
1389135 Sucrose production AGENCY OF INDUSTRIAL SCIENCE & TECHNOLOGY AND HOKKAIDO SUGAR CO Ltd 31 May 1973 25965/73 Heading C6B Sucrose is produced in an increased yield from molasses or sugar beet juice by hydrolysing the molasses or juice at a temperature below 65‹C with α-galactosidase to convert raffinose to sucrose and galactose and subsequently removing the so formed sucrose from the resultant hydrolysate. Preferably the concentration of the molasses or juice does not exceed 65‹ Brix and the α-galactosidase is substantially free from invertase and may be obtained from a culture of a microorganism such as Mortierella vinacea var raffinose utilizer. The α-galactosidase may be reacted for 2 to 3 hours with the molasses in a ratio of 2,500,000 to 5,500,500 units of enzyme to one grain of raffinose at 45‹ to 55‹C and a pH of 4.8 to 5.2
