Abstract

1,133,046. Lowering the starch content of juices. COLONIAL SUGAR REFINING CO. Ltd. Feb.15, 1967 [March 3, 1966], No.7159/67. Heading C6B. The starch content of an aqueous sugar solution, such as clarified sugar-cane juice or syrup in a sugarmill or refinery, is reduced by adding to the solution, or to raw sugar which is dissolved in water to form the solution, at least one thermostable bacterial enzyme having no invertase activity; the temperature of the solution being raised above 160‹ F., preferably above 175‹ F., but not above the de-activation temperature of the or each enzyme. Suitable bacterial enzymes are the non- pathogenic amylases, having mainly α amylase activity, derived from strains of Bacillus subtilis. The or each bacterial enzyme may be added to clarified sugar juice, being concentrated, under reduced pressure, e. g. in the third or fourth chamber of a multiple-effect evaporator.
