Abstract

1385400 Flavouring food and tobacco INTERNATIONAL FLAVORS & FRAGRANCES Inc 23 Nov 1972 [23 Nov 1971] 54201/72 Headings A2B and A2C [Also in Divisions A5 C2 and C5] The flavour or aroma of food and tobacco is altered by adding at least one sulphinate of formula: (I) where R 1 is an alkyl, alkenyl, cycloalkyl, aryl, alkaryl or aralkyl group, R 2 is an alkyl group, and R 1 and R 2 together contain at least 4 C atoms. The concentration of sulphinate in the final product should be 0.5 to 150 ppm. The sulphinate may be added either alone, or as a flavouring or aromatising composition together with a known flavouring or aromatising agent and/or stabiliser and/or thickener and/or surface active agent and/or conditioner and/or vehicle or carrier. The sulphinate is present in such compositions in an amount of 0.5 to 25%. In food flavouring compositions the other flavouring agent present may be 2- isobutyl thiazole, 2-methoxy-3-isobutylpyrazine, diallyl disulphide, dipropyl disulphide, or propyl propenyl disulphide.
