1384937 Extracting gelatine VSESOJUZNY NAUCHNO - ISSLEDOVATELSKY INSTITUT PTITSEPERERABATYVAJUSCHEI PROMYSHLENNOSTI 26 Oct 1972 49342/72 Heading C3H A method of producing gelatine from collagen-containing animal tissue comprises treating tissue with an alkali solution containing a salt of an inorganic acid, neutralizing the resulting partially disintegrated material with a solution of an inorganic acid containing a salt of an inorganic acid preferably orthophosphoric acid to cause swelling and further disintegration of the material, freezing the swollen acid-treated material, e.g. at - 10 to - 12‹ C. to further disintegrate it, washing the material, boiling the washed material in an aqueous medium to obtain a gelatine broth and recovering gelatine from the broth. The washing is preferably carried out using a salt of a sulphur-containing acid, e.g. sodium sulphate and the preferred alkali treatment uses sodium hydroxide solution saturated with sodium sulphate.
