Abstract

1358807 Caramel GENERALE SUCRIERE SA 9 Aug 1972 [23 Sept 1971] 37252/72 Heading A2B A sugar or carbohydrate syrup is passed along a pipe constituting a heating zone where the syrup is subjected to temperature and pressure conditions to caramelise it and produce steam, a steam extraction zone at which the pipe terminates and from which the steam is allowed to escape freely, the resulting caramel then passing to a cooling zone, water, optionally together with adjuvants, being added to the caramel downstream of the extraction zone. An apparatus comprises a syrup reservoir, a feed pump, a pipe having heating means, a separator where steam may escape freely, a receiver tank, means for adding water, and cooling means.
