Abstract

1350447 Pasta production G MAINO 3 Aug 1971 [12 Aug 1970] 36350/71 Heading A2B A method of making a cappelletto, which consists of a dough casing formed by folding a sheet dough blank into two layers between which a filling is disposed, comprises forming seats at two opposite locations disposed respectively adjacent the two ends of the folded edge of the casing, and engaging into the seats respective mechanical members which then each carry out a respective swinging movement towards each other and through approximately 90‹ in opposite directions, thereby causing the corresponding portions of the. casing to slide over a smooth part of a plane which supports the cappelletto so as to pinch the portions of the casing together. The method may be carried out in the apparatus shown in Fig. 8 wherein a plane 9, smooth but with a small farrow 10 (not shown) in its upper surface., has mounted thereabove a punch 12 and mechanical members 13. The punch and mechanical members are attached to rotatable shafts 19, 20, and are vertically moveable. The profile of the punch is the same as that of the furrow so that, when the punch is lowered on to the dough casing, which is positioned on the plane 9, a corresponding furrow is impressed in the casing. The fingers 13 press into the layers 5" of the casing and immediately the fingers rotate as shown in Fig. 4. Thus, while the arcuate part 23 of the layers 5" is kept still by punch 12 and furrow 10 (not shown), the portions 24 of the casing are stretched, as indicated by the arrows in Fig. 4, until they are pinched together. A stop 11 (Fig. 5, not shown) ensures that, when the punch and mechanical members are raised from the plane the cappelletto is removed therefrom.
