Abstract

1348533 Bakery products CAMPBELL TAGGART ASSOCIATED BAKERIES INC 18 Feb 1971 4961/71 Heading A2B A cereal based mix or shaped product which can be baked to produce a food product (e.g. cake, roll, biscuit) having distinct areas of flavoured and/or coloured shortening, is prepared by mixing a flavouring and/or colouring material with a melted shortening having a m.p. of 95‹-111‹F and a slow flow rate when melted, solidifying and forming the mixture into particles (e.g. flakes), mixing the particles with other food ingredients to give a cereal based mix and if a shaped product is being produced, forming the mix into a desired shaped product. The shortening may be palm, palm kernel, coconut or cottonseed oil or coconut stearine hardened by hydrogenation or crystallisation. The mix may contain butter, fruit, meat, vegetable and cheese flavours, salt, yeast, carotene and organic acid. The dry mix or shaped product which may be frozen, may be packaged.
