1338997 Cultivating and extracting moulds GREENSHIELDS INVENTIONS Ltd 29 Dec 1970 [29 Sept 1969] 44714/69 Heading C6F [Also in Division A2] A process for making an extract from a mould which is at least substantially free from spores involves causing lysis of the constituent cells of the mould to occur, pepsin being added to cause or assist lysis and separating the resultant extract from the cell debris, any undigested cell material and any other gross solids. If the mould is grown under conditions such that spores are present in significant quantities, such spores should be severed from the remainder of the mould before the extract is made. The mould may be dried to a powder and the powder suspended in aqueous liquid before lysis occurs. The pH of the extract produced is adjusted to a desired value between 3.6 and 7.0 by the addition of hydrochloric, acetic and citric acids or sodium hydroxide (as appropriate). Sodium chloride, sodium glutamate, nucleotides and caramel colouring may be added and the resulting product concentrated or dried to a powder. (It is stated that the flavour becomes more "meaty" and less "vegetable" as the PH is increased within the range specified). Alternatively, the extract may be used as a nutrient for the growth of micro-organisms in place of ammonium sulphate. Examples describe the preparation of extracts from the following: Penicillium notatum, Aspergillus oryzae, Gibberella fujikuroi, Aspergillus luchuensis, Penicillium chrysogenum and Aspergillus niger.
