1325180 Hop extract emulsion and apparatus FORSCHUNGSINSTITUT FUER DIE GAERUNGSINDUSTRIE ENZYMOLOGIE UND TECHNISCHE MIKROBIOLOGIE 15 Dec 1970 59404/70 Headings B1C and BIV Hop extracts or preparations are mixed with water, wort, ethanol or other water-miscible liquid and the mixture, containing e.g., up to 80% by weight of water, is emulsified by the introduction of steam to give a meterable product. Alkali (sodium hydroxide or carbonate or potassium hydroxide) is preferably included in the mixture prior to the emulsification, in a concentration of between 0.5% and 5% by weight. The emulsified mixture may be further treated by stirring, shaking or ultrasonic treatment. Referring to the drawing, opened vessels of hop extract are clamped in holders 6 consisting of lattice-like gratings of about 1 cm<SP>2</SP>, size above a steam injection nozzle 2, and liquid supplied through pipe 3. Hop oils released during the emulsification of the hop extract in the presence of liquid, are condensed in condenser 7. The emulsified mixture may be stabilized by operating a stirrer or an ultrasonic device 8.
