1318863 Salting cheese NATIONAL DAIRY ASSOCIATION OF NEW ZEALAND Ltd 3 June 1970 [6 June 1969] 27493/69 Heading A2B An apparatus for supplying salt to cheese curd comprises an endless conveyor belt 78 for conveying a layer of curd, a salt distributing hopper 34 connected to a salt distributing boom 83 having nozzles 96, by flexible tubes 97, and having a feed screw 65 supplying salt to the tubes 97 via a rotating disc 66, and a sensing fork 100 in contact with the curd layer for sensing the level of the curd layer, the speed of rotation of the feed screw 65 being controlled in dependence on the up and down movements of the fork with changes in the level of the curd layer, whereby the amount of salt issuing from the nozzles 96 is controlled. Means may be provided for oscillating the boom transversely to the conveyor movement. The apparatus comprises a bulk salt storage hopper 1 to which salt may be fed automatically and from which salt is automatically discharged by feed screw 6 into pipe 7 when the salt level in hopper 34 drops below a desired level, and conveyed by heated air maintained under a predetermined pressure, through cyclone 33 to hopper 34. Device 98 supplies heated air to maintain the salt free-flowing as it is conveyed to the nozzles 96. Stirrers may be provided in the hoppers 1 and 34.
