Abstract
1307715 Aerated food MILCHVERSORGUNG MUNCHEN GmbH 28 April 1970 [2 May 1969] 20419/70 Heading A2B [Also in Division C5] A non frozen food based on a milk product or chocolate composition comprises 40-150% by volume of the gas-free food of homogeneously distributed gas containing little or no oxygen. The gas may be nitrogen. The food may be prepared by continuously beating the food in a rotating drum at a pressure of 1-5 atmospheres and at a temperature of at least 1‹C (e.g. 1-8‹C or 12-15‹C depending on the food) with the gas. The food may be based on cream, yoghurt, curds or butter. The food may comprise jam, cocoa, spice, salt, sugar, artificial sweeteners, herbs, anchovy paste, fruit concentrates, gelatin, starch carrageen, carob bean, alginates, agar-agar, pectin, lecithin and whipped edible protein.
