A process for preparing fried potatoes comprises the steps of contacting peeled potatoes, for example in the form of strips or slices, with a liquid refrigerant so that the surfaces only are frozen, thawing and leaching the frozen potatoes by contacting with water, for example at 50-65‹C for 1-5 minutes, and thereafter frying, for example pan frying, the thawed and leached potatoes.
