The casing of a prepared sausage is removed and the sausage is then sliced, the slices reassembled to reconstitute the original shape of the sausage, and the thus reconstituted sliced sausage is placed in a fluid tight envelope, for example by placing them in a plastic casing under vacuum or by applying a coating of a food wax.
