A potato peeling machine of the type that comprises a housing 1 having a rotatable floor plate 10, which may be mounted at an inclination, and peeling knives 5 (13), Figs. 2 and 5 (not shown), carried by the inner wall of the housing 1 and the floor plate 10 respectively is characterized in that each knife has two opposed cutting edges (8, 8a; 11, 11a), Figs. 4, 6, 7 (not shown), and that the direction of rotation of the floor is reversible. The peeling knives 5 are each mounted on upper and lower rings 4, 3 respectively so that all their cutting edges (8, 8a) lie in a cylindrical plane, and the cutting edges (11, 11a) of the knives (13) on the floor plate lie in a flat plane.
