A frozen slightly fried potato product, which may be fried to give the food referred to in Switzerland as "R÷sti" or "Kartoffelr÷sti" is prepared by cutting peeled potatoes into pieces of about equal size, heating the pieces in water until the heart of the pieces is at 60-80‹C, cooling the pieces until the heat is below 25‹C, cooking the pieces in water or steam for such a time that, if T is the temperature and t the cooking time, / 0 <SP>t</SP>Tdt is 300-900‹C minutes, coarsely grating the cooked pieces, if desired after cooling, and lightly frying, fat and other constituents being added, and forming the lightly fried gratings into a cake which is deepfrozen. The cake may itself be lightly fried on both sides before being deep frozen, and may be wrapped in an air-tight foil.
