Abstract

Slicing apparatus, for sugary bakery products, of the band-knife type comprises driven blades 32, conveyers 10, 12 for traversing the products relative to the blades and means for applying a film of water to the blades 32 to prevent a buildup of the product thereon. The bands of knives are mounted on a drum 28, driven by a motor operated by a spring-pressed solenoid switch 36, and an idler drum 30. The blades are led through guides 34 which rotate the blades through 90 degrees to align them with the path of travel of the products. The conveyers 10, 12 are driven by a motor 20 which is operated by a solenoid-operated clutch 22. The moisture applying means comprises a main conduit 40, closable at its lower end by a solenoid operated valve 52, and a secondary parallel conduit (41), Fig.3 (not shown) linked by cross conduits 42, 42 and 43, 43 which carry spray heads 44, 46 and 48, 50 respectively so that moisture is directed on to both sides of the blades 32 and also the drums 28, 30. In one system for supplying moisture to the conduit 40, air under pressure is passed along line 54, through an atomizer 58 which is supplied with water from a reservoir 60 to conduit 40. In the alternative, and preferred, system steam is supplied from a boiler to line 74 which has connected to it a by-pass 78 to feed condensed steam back to a condensate tank. The line 74 communicates with a conduit 72 through a solenoid-operated valve 82. Condensed steam may be passed from the valve 52 to the condensate tank. If further moisture is required it can be directed to the main conduit 40 via line 104. Two scraper-blade assemblies 84 are also provided. The motor 35 is started by closing switch 38, while closure of switch 24 engages the clutch 22, thus starting the conveyer drive, and also operates solenoid-operated switch 25 to start the moistureapplying means.
