Abstract

1,255,391. Dessert compositions. ROWNTREE MACKINTOSH Ltd. 19 Jan., 1970 [20 Jan., 1969; 7 May, 1969], Nos. 3161/69 and 23274/69. Heading A2B. A fat-free dessert composition comprises a mixture of powdered gelatin that is substantially soluble in cold water, a carbohydrate sweetener of which part at least is a hydrolysis product of starch which has a lesser sweetening power than sucrose, a stabiliser and flavouring and which is either free of starch or contains not more than 3 % of pregelatinised starch by weight. The composition may contain a foaming agent to facilitate foaming the powdered composition in an aqueous medium. The composition may also contain an acidic fruit flavouring and skimmed milk powder. Suitable carbohydrate sweeteners are glucose and glucose or corn syrup solids, for instance maltodextrin. The gelatin may be prepared for use by spray-drying a solution of gelatin and part at least of the sweetener. The composition may optionally contain sodium caseinate or whey powder.
